    "Mai pen rai" is a common expression used by the Thais which means "it's all right". This sums up their approach to life and is reflected in their warm smiles and genuine love for giving warm and friendly service to the farangs (friends) who visit their country. Many people say their main reason for repeat visits is down to the warmth of the people. This warmth permeates through all levels of Thai society from city dwellers to the many ethnic hill tribe people living in the north of the country.

    Nowhere does the natural beauty of Thailand shine through more than in the national parks dotted around the country. Thailand has one of the highest percentages of protected land of any nation in the world. Whilst today the larger species such as the Asiatic bear and Asian tiger are rather elusive, there are still great viewing opportunities available including hornbills in Doi Inthanon, wild elephants in Khao Yai and giant manta rays in the Similan Islands.

    The majority of Thais are devout Buddhists and this devotion manifests itself in the ornate and wonderfully sculptured temples, or wats, which can be found in every part of the country. The two most famous examples are Wat Pho in the capital, Bangkok and the magnificent Doi Suthep in the northern town of Chiang Mai which is perched on a hill overlooking the city. However a typical journey through Thailand will throw up an array of more subtle but no less interesting wats where the locals can be seen paying their respects to Buddha.

Excursions in Thailand: Cookery Class at Khum Lanna

Khum Lanna is located 100 kilometres north of Chiang Mai, three kilometres southwest of the small town of Phrao. Ringed by tall mountains on three sides, in a small valley of emerald green rice fields and tropical orchards, the atmosphere here is completely charming.

Khum Lanna is located 100 kilometres north of Chiang Mai, three kilometres southwest of the small town of Phrao. Ringed by tall mountains on three sides, in a small valley of emerald green rice fields and tropical orchards, the atmosphere here is completely charming.

The day starts with a visit to the morning market at Phrao (north of Chiang Mai) for an introduction to local fruit and vegetables and other ingredients that you will be cooking with at the farm. On arrival at Khum Lanna you will be given a traditional Lanna welcome and a tour of the gardens in which you'll collect seasonal herbs and other ingredients for the country-style BBQ lunch you will be preparing.

The cookery class includes a comprehensive and easy to follow recipe book, a practical demonstration of how to prepare five different dishes and an informative description of how to prepare all the delicious ingredients you will be using. You will then have chance to savour the delicious dishes you've created. In the afternoon the cookery class continues with a lesson in making a typical Thai dessert.

Before returning to Chiang Mai and your hotel in the late afternoon, you take a cycling tour to visit Aui Kham's house, where you can learn about traditional healing and herbal medicine from Aui Kham himself who has accumulated more than 60years experience in this field.

Activities around the farm emphasize the rural traditions celebrated in this area such as ox-cart and water buffalo rides as well as the local culture. Bicycles are also available to explore the surrounding countryside and hamlets.
