Josh

Canada Specialist

I've always been fascinated by how this small planet that we call home can have such a vast array of cultures, languages, and histories — it's something that led me to study a BA in German and Spanish at the University of Bristol. I love being immersed in other cultures, learning their language(s), and above all, eating their food. That's where my passion for travel comes from, as it feeds my fascination for experiencing more of what the world has to offer.

Canada became an area of particular interest for me during the two years that I lived in Mexico City. I worked as a travel and lifestyle concierge for a portfolio of Canadian clients during the pandemic, designing some of the most intricate staycations which kept my clients' travel appetites full. Fast forward to now, having spent four weeks travelling across Canada, I've experienced the wonders of Jasper National Park, fallen in love with Vancouver Island's charm, and delved into some of the best sushi outside of Japan.

Q&A with Josh

Duck wings, Canmore

What’s the best local dish you’ve tasted?

When you think of ‘Canadian food,’ the thing that most commonly crops up is poutine or maple syrup. For me, however, duck wings are something that I’d consider a local dish as I’ve only ever seen them in Canada. It might sound a bit strange, but they’re extremely tender and are usually an explosion of flavour. At a particular gastropub in Canmore, the duck wings had a delectable maple and habanero glaze which left me licking my fingers at the end of the meal.

Josh on a helicopter tour, Canmore

What’s your most vivid travel moment?

I’m extremely lucky to have been on a helicopter ride over Mt Assiniboine and the surrounding glaciers in the Canadian Rockies. Although it only lasted 35 minutes, the experience was mind-blowingly surreal. Never in my wildest dreams did I imagine that I’d ever be so up close and personal with some of the world’s most beautiful snow-capped mountains. Everywhere I looked there was something to marvel at: mountain ranges near and far, crystal blue lakes down below, even the clouds were spectacular from above. This was truly a once-in-a-lifetime experience that I’ll cherish forever.

Gwangjang market

Where would you love to travel next?

Next on my list is South Korea. The main thing that draws me to the small but mighty country is the importance that Koreans put on food, and how intertwined food is within their culture. From tteokbokki to kimbap, nangmyeon to bibimbap, I’ve tried many Korean dishes outside of Korea and have grown a fond love of the flavour profiles commonly found within its cuisine. Now, it’s time to experience it first-hand — my first stop will be Gwangjang Market in Seoul.
