Our winter is a wonderful time of year for traveling long haul to find good weather in a number of fascinating countries. The first destination that springs to mind for you would be Brazil.
Brazil is an amazing destination and would be a superb option for an exciting anniversary trip and here you can certainly combine wildlife, walking and even dancing.
The country offers so much variety, you can explore the magnificent colonial towns of Salvador and Paraty, enjoy the scenery and fantastic wildlife in the Pantanal region or in the Amazon rainforest itself. There are also some incredible beaches for relaxation too, you might like Buzios or the far quieter Ilha Grande. For entertainment and dancing you can always find a little samba locally at live music venues and this tends to be enjoyed with a caipirinha or two.
