Cattle mustering in Australia's Northern Territory

You can't get more authentic that herding cattle through the dusty plains of the Australian outback and there is no better place to do this than Bullo River Station in Australia's Northern Territory.

There are plenty of opportunities to learn some real Aussie bush crafts and you could find yourself roping cattle or flying round in the property's helicopter inspecting fencing. Other activities include barramundi fishing or simply exploring your surroundings by boat or foot in this off-the-beaten-path destination, where wildlife is in abundance and Aboriginal rock art adorns the landscape.

Cave Hill visit in the Red Centre

Learn about Australia's indigenous culture away from the crowds of Uluru with a 4x4 trip into the Pitjantjatjara Lands of Central Australia. The Anangu people are the traditional owners of Cave Hill and an Anangu host will be your guide for the day, which focuses on the history and beliefs of these fascinating people.

You'll see magnificent cave paintings depicting the Aboriginal creation story, learn about bush tucker and traditional food gathering, as well as climb to the top of Cave Hill to take in the stunning surroundings. Keep your eyes peeled for Uluru, 100 km away in the distance.

Driving through the Outback

Australia is one of the best countries in the world for self-drive holidays, but if you really want to experience Australian life away from the tourist trail, take a drive through the Kimberley region at your own pace.

Considered one of Australia's last unspoiled areas, the Kimberley presents an eclectic mix of landscapes including rugged cave systems, pristine beaches, vast deserts and verdant rainforests, where friendly locals and resplendent wildlife are all part of the experience.

The roads here are unsealed and most require a 4x4, so this really is an authentic experience, which couldn't be further away from the dazzling lights and frenetic pace of Australia's famous cities.

Exploring Arnhem Land

Arnhem Land is another authentic experience that focuses on Aboriginal culture, it's an area in the north of Australia, which is owned by the Aboriginal people themselves. Those who live here are mainly indigenous and there are only a handful of tour companies that have been granted access, making this a very unique experience.

Venture deep into Arnhem Land crossing the East Alligator River into Red Lily Billabong, before visiting Aboriginal artists at work in the Gunbalanya (Oenpelli) settlement. You'll also enjoy a walk with a local guide up Injalak Hill, home to some fine examples of rock art before being given the opportunity to enjoy your surroundings for the afternoon, making for a truly memorable and insightful experience.

Wildlife viewing on Kangaroo Island

One of Australia's hidden gems, Kangaroo Island is situated just off the south coast near Adelaide. Separated from the mainland several thousand years ago the island is home to a plethora of wildlife including endemic kangaroos, sea lions, seals, whales and echidnas, all of which can be viewed in their natural habitat.

The island is also famous for its delectable, locally produced food and wine, and sampling both is very much part of a visit to the area.

While day trips can be made from Adelaide, it's worth considering spending the night in one of Kangaroo Island’s properties, such as the spectacular Southern Ocean Lodge. This is the perfect place from which to take in the local wildlife inhabitants, who can be viewed in their hordes and best witnessed during feeding time at dusk and dawn.
